Ian Beck has an awesome post about how to change your prompt colors in OS X, though he has terrible taste in which colors to make it. Having the prompt be a difference color from the rest of the terminal output makes it easier to tell when commands have finished and where commands you entered are in the scrollback. I made my prompt red on a black background by adding the following to ~/.bash_profile (or where bash happens to look when it starts up)

export PS1="\[\e[31;40m\]\h:\W \u\$ \[\e[0m\]"
